Bánh khọt is one of the signature specialties of Vung Tau and has been honored by the Asian Record Organization as one of 12 Vietnamese dishes possessing “Asian culinary value.”
Bánh khọt is the characteristic pancake of Vung Tau in particular and Southern Vietnamese people in general. Made from rice flour or cassava flour, it is fried with fillings and served alongside fresh herbs, chili, and a sweet-sour fish sauce dip.
A touch of turmeric powder can be added to the batter for a striking golden hue. The fillings are wonderfully varied – fresh scallops, shrimp, minced pork, fish cake – finished with scallion oil or shrimp floss and paired with crisp raw vegetables.
The name “bánh khọt” has a delightful story. Locals say that when the hot, crispy pancake is lifted from its mold, it makes a distinctive “khọt khọt” sound – hence the charming onomatopoeic name.
A light sprinkle of chili powder on top adds just the right heat and vibrant color. A plate of these golden, crackling morsels is pure temptation for anyone eager to discover Vung Tau’s street-food treasures.
Once a simple family treat prepared by mothers and grandmothers on weekends, bánh khọt has grown alongside Vung Tau’s booming tourism, evolving from home-cooked comfort to a beloved destination dish.
Today, legendary spots such as Bánh khọt Gốc Vú Sữa, Cây Sung, Cô Ba Vũng Tàu, and Miền Đông are favorite gathering points for both locals and visitors exploring the seaside city.
The perfect way to enjoy: wrap each pancake in a lettuce leaf with fragrant herbs, then dip into thick, sweet-sour fish sauce. The contrast of crispy shell, sweet seafood, cooling greens, and aromatic scallion oil creates an unforgettable harmony that will make you crave another bite instantly.
